Growing up, cosmic brownies were my go to lunch snack so obviously I had to recreate them. Now that I’m gluten free and more mindful about what I’m putting in my body, these Cosmic Brownie Truffles are THE upgrade. Same nostalgic, chocolatey vibes… just a little more balanced
Ingredients
- 1.5 cup1.5 cup1.5 cup Almond Flour

- 0.33 cup0.33 cup0.33 cup Cocoa Powder

- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Chocolate Collagen - Further Food

- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup

- .25 cup.25 cup.25 cup Cashew Butter

- .25 cup.25 cup.25 cup Almond Milk Yogurt
- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 pinch1 pinch1 pinch Himalayan Pink Salt

- 1 tsp1 tsp1 tsp Coconut Oil

- In a bowl, mix almond flour + cocoa powder + salt.
- Add maple syrup, nut butter, yogurt, and vanilla.
- Stir until a thick, fudgy dough forms.
- Scoop and roll into bite-sized balls.
- Place on a lined tray and chill for 15–20 minutes.
- Melt chocolate (with coconut oil if using).
- Dip each truffle, coating fully.
- While chocolate is still wet, top with rainbow sprinkles.
- Chill until chocolate hardens (about 15–30 minutes).
