Cranberry, Walnut, and Goat Cheese Salad with Fig Balsamic Dressing
This winter salad is always on my holiday menu. It's perfect for Thanksgiving, and any December holidays you celebrate, or the perfect side dish for a fall or winter gathering with friends and family. It comes together in 20 minutes or less, and is incredibly delicious! This salad is one of my most requested side dishes when we have guests over for dinner!
Ingredients
- 8 cups8 cups8 cups Lettuce, Spring Mix Salad Greens
- 1/3 cup1/3 cup1/3 cup Red Onion, thinly sliced
- 3/4 cup3/4 cup3/4 cup Walnuts, chopped

- 3/4 cup3/4 cup3/4 cup Dried Cranberries, Unsweetened
- 8 oz8 oz8 oz Goat Cheese
- 1/2 cup1/2 cup1/2 cup Organic Everyday Extra Virgin Olive Oil - Kosterina

- 1/3 cup1/3 cup1/3 cup Fig Balsamic Vinegar - Kosterina

- 1/4 tsp1/4 tsp1/4 tsp Himalayan Pink Salt - Primal Palate

- 1/4 tsp1/4 tsp1/4 tsp Black Peppercorns, Ground Fresh

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the salad greens to a large salad bowl.
- Add in the thinly sliced red onion, chopped walnuts, and dried cranberries to the salad greens.
- Crumble the goat cheese into the salad bowl.
- In a small jar, combine the olive oil, fig balsamic vinegar, salt, and pepper. Seal with a lid and shake vigorously to combine.
- Pour the dressing over the salad, and toss the salad to evenly combine all of the ingredients.
- Serve immediately after tossing the salad with the dressing.
