Gluten-Free Monster Cookies
These Gluten-Free Monster Cookies are so fun to make, and even more fun to eat! Crispy on the outside, chewy on the inside, with chocolate chips, chocolate candies, sprinkles, oats, and peanut butter. You will love every bite of these cookies!
Ingredients
- 210 grams210 grams210 grams Gluten-free All-Purpose Flour - Primal Palate, 1 3/4 cup spoon filled and leveled
- 1/2 tsp1/2 tsp1/2 tsp Himalayan Pink Salt
- 1/2 tsp1/2 tsp1/2 tsp Baking Soda
- 1/2 cup1/2 cup1/2 cup Unsalted Butter, at room temperature
- 1/3 cup1/3 cup1/3 cup Brown Sugar, 1/3 cup packed
- 6 Tbsp6 Tbsp6 Tbsp Granulated White Sugar
- 1 whole1 whole1 whole Egg, at room temperature
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1/4 cup1/4 cup1/4 cup Organic Creamy Peanut Butter
- 3/4 cup3/4 cup3/4 cup Gluten Free Rolled Oats
- 1 cup1 cup1 cup Semi-Sweet Chocolate Chips
- 1 cup1 cup1 cup Unreal Chocolate Gems, or Trader Joes candy coated milk chocolate candies
- 3 Tbsp3 Tbsp3 Tbsp Color Kitchen Foods Rainbow Sprinkles, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to bake at 375 degrees F, and line two baking sheets with parchment paper.
- In a medium size mixing bowl, whisk together the flour, salt, and baking powder.
- In a large mixing bowl, with a hand mixer, or using a stand mixer, beat the butter with the brown and white sugar.
- Add in the egg, and beat again.
- Add in the peanut butter, and vanilla, and beat again until smooth.
- Add the dry mix to the wet, and beat until you have a smooth batter.
- Stir in the oats, chocolate chips, chocolate candies, and sprinkles.
- Using a cookie scoop, dish out the portions of dough for each cookie on to your baking sheets, spacing them about 2 inches apart.
- Bake one tray at a time, in the center of the oven on the middle rack, for 12 minutes.
- Repeat with the remaining dough.
- Allow the cookies to cool for 5-10 minutes before removing them from the cookie sheet.
- Enjoy!

These were a huge hit, even with my gluten-loving family! I am not a baker and they still turned out deliciously, which says a lot! Definitely making these again!!
