Creamy Chicken Gnocchi (GF)
This is the perfect creamy rich dish for a quick one pot meal. I love a one pot dish, especially when it is flexible. You have to try this, trust me.
Ingredients
- 222 Chicken Breasts, Boneless Skinless, cut into 1” cubes

- 2 tsp2 tsp2 tsp Extra Virgin Olive Oil

- 1 tsp1 tsp1 tsp Sea Salt

- 1 tsp1 tsp1 tsp Black Pepper

- 111 Onion, small dice
- 111 Bell Pepper, small dice
- 111 Zucchini, small dice
- 2 cloves2 cloves2 cloves Garlic, minced

- 3 pieces3 pieces3 pieces Rainbow Chard, ribbed and thinly sliced
- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted

- 2 Tbsp2 Tbsp2 Tbsp Sun Dried Tomato Pesto (click for recipe), or 2-3 sun-dried tomatoes minced
- 9 oz9 oz9 oz Potato Gnocchi
- 1.25 cup1.25 cup1.25 cup Chicken Bone Broth

- .25 cup.25 cup.25 cup Half and Half, or cream or full fat plain yogurt
- 1 cup1 cup1 cup Gruyere Cheese, shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet cook the chicken in oil on medium heat until done, about 7 minutes.
- Add salt, pepper, onion, bell pepper, garlic, and zucchini. Stir and cook for 3 minutes.
- Add chard, butter, sundried tomatoes and stir. Cook 1 minute.
- Add gnocchi, broth, and half and half. Stir then cover and turn to medium low. Cook for 3 minutes. Stir at least once.
- Remove lid and stir. Check doneness of gnocchi.
- When done add cheese and stir. Allow to melt into the sauce and thicken.
Notes
You can use other vegetables if you like. Cauliflower or broccoli would be amazing as well. You can top with a little grated Parmesan for even more decadent flavor.
