Creamy Lemon Basil Spaghetti Squash (Edit recipe)

This is another recipe that I have wanted to post for a while. I love pasta with red sauce but sometimes I really want a creamy and delicious pasta dish. Basically avocado is the most brilliant piece of fruit EVER! I really have no idea what I would do without it. I started making this creamy lemon basil sauce a couple months ago and basically put it on this that and everything. It totally satisfied my desire for creamy comfort food without feeling terrible after.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place all of the sauce ingredients in a food processor or blender and puree until smooth.
  2. Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot add the tomatoes and sautu00e9 about two minutes.
  3. Add the rest of the ingredients and sautu00e9 for another 5 minutes. Add about u00bd cup of the sauce and mix thoroughly.
  4. Serve as is or add some of your favorite protein or vegetables.

Notes

You can substitute any of your favorite pasta for the spaghetti squash in this recipe.
