These flavorful Lemon Blueberry Cottage Cheese Bars are baked cheesecake-style bars made with blended cottage cheese, lemon juice and zest, and blueberries, without protein powder. Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350F (175C). Line an 8x4 loaf pan with parchment paper, leaving overhang for easy removal.
- Blend the cottage cheese until completely smooth, scraping down the sides as needed.
- Add the eggs, sweetener, lemon juice, lemon zest, almond flour, baking powder, salt, and vanilla extract (if using). Blend until fully combined and thick.
- Pour the batter into the lined pan and smooth the top.
- Scatter the blueberries over the surface and lightly press them in so they stay in place.
- Bake for 30 to 40 minutes, until the edges are set and the center has a small wobble (not wet), or until the center reaches about 160F (71C). Cool in the pan.
- Refrigerate for at least 3 hours (overnight is best) before lifting out and slicing into 8 bars.
- Bake at 300F (150C) for 30 to 40 minutes, until set with a slight wobble in the center. Chill fully before slicing.

Notes
Blend the cottage cheese completely smooth for the best cheesecake texture. Fresh blueberries work best. Frozen berries may create a softer center and more purple streaking. Store in an airtight container in the refrigerator for several days. Slices often cut cleaner on day two. These bars are best refrigerated. Freezing can change the texture and make them slightly grainier after thawing.
