Creamy Mushroom & Maïzly Soup
A velvety, earthy mushroom soup with golden croutons and a silky finish—completely dairy-free thanks to Maïzly Original.
Ingredients
- 1 whole1 whole1 whole Onion, medium, finely diced
- 2 Tbsp2 Tbsp2 Tbsp Vegan Buttery Spread, brand of choice
- 1 tsp1 tsp1 tsp Thyme, Fresh, or ½ tsp dried

- 2 cups2 cups2 cups White Mushrooms, sliced, button, cremini, or a mix
- 1.5 cups1.5 cups1.5 cups Cornmilk - Maizly

- 1 cup1 cup1 cup Nutritional Yeast

- 1 pinch1 pinch1 pinch Nutmeg, freshly grated, a little goes a long way
- 2 Tbsp2 Tbsp2 Tbsp All Purpose Flour
- Salt and Pepper, to taste
- White Mushrooms, sautéed
- Croutons, store-bought or homemade
- Olive Oil, a drizzle

- Thyme, Fresh, a few leaves

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Sauté the base. In a medium pot, melt vegan butter. Add onions and thyme and cook over medium heat until translucent and fragrant—about 5 minutes.
- Add the mushrooms. Stir in the sliced mushrooms and a pinch of salt. Sauté until softened and golden, about 8–10 minutes. Season & sprinkle. Add nutritional yeast, a touch of fresh nutmeg (grated), and the flour. Stir to coat everything and cook for 2–3 minutes to eliminate the raw flour taste.
- Pour in Maïzly. Slowly add Maïzly Original while stirring. Let it simmer gently for 5–8 minutes until thickened and creamy. Add pepper and adjust salt as needed.
- Blend it (optional). For a silky soup, blend most of it and leave a few mushrooms unblended for texture—or blend it all for extra creaminess.
- Garnish & serve. Top bowls with sautéed mushrooms, crunchy croutons, a drizzle of good olive oil, and a few thyme leaves. Serve warm and cozy.
