Crispy Oven-Baked Tacos
We're still keeping the Meals My Husband Loves series going! This seems to be a fan favorite, and I get it - who doesn't need some inspiration to get your significant other to love (and crave) healthy eating?
For this latest addition, we have these insanely delicious Crispy Oven-Baked Tacos that are a new staple in our own meal rotation! They're super easy to whip up and can be amped up with all of your favorite toppings.
I know your husbands, kids, roommates, and more will ask for this meal again and again. Let me know if you give it a try!
Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 1 lb1 lb1 lb Ground Beef, grass fed, or sub ground chicken
- 0.50.50.5 Onion, diced
- 3 cloves3 cloves3 cloves Garlic, minced
- 4.5 oz4.5 oz4.5 oz Green Chilies, (1 can)
- 111 Taco Seasoning, (1 packet)
- 1 pinch1 pinch1 pinch Salt and Pepper, to taste
- 0.333 cup0.333 cup0.333 cup Cilantro
- 1 whole1 whole1 whole Lime, juiced
- 1.5 cup1.5 cup1.5 cup Sharp Cheddar Cheese, shredded
- 888 Flour Tortilla
- 1 pinch1 pinch1 pinch Sour Cream, & other toppings - avocado, salsa, etc. to serve

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425 degrees. Line a sheet pan with parchment paper, & lightly spray with non-stick cooking spray.
- Add 1 tablespoon avocado oil to a large cast iron skillet over medium-high heat. Add ground beef or chicken, onion, and garlic. Cook for about 3-5 minutes, until no pink remains, and onion is softened. Crumble beef as it cooks.
- Add in green chiles, taco seasoning, salt and pepper. Mix to combine. Reduce to low heat.
- Add in cilantro, lime juice, and 1 cup of the cheese. Stir to combine & melt.
- Place tortillas on prepared baking sheet.
- Add a few spoonfuls of taco meat to each tortilla, covering just one half.
- Cover meat with an additional sprinkle of cheese (this acts as your “glue” to keep it all together).
- Fold the other half of each tortilla over to seal.
- Brush the tops of the tortillas with the rest of your avocado oil to help them crisp up.
- Bake until golden & crispy, about 12-15 minutes.
- Serve with toppings of your choice, and enjoy!
