Easy Crisp Passover Chocolate Chip Cookies
These Passover chocolate chip cookies are gluten-free, dairy-free, and packed with rich chocolate flavor. Made with almond flour and potato starch, they have crisp edges, a soft center, and a deliciously chewy texture. Perfect for the holiday or any time you need a flourless treat!
Ingredients
- .75 cup.75 cup.75 cup Avocado Oil
- .5 cup.5 cup.5 cup Granulated White Sugar
- 1 cup1 cup1 cup Brown Sugar, packed
- 2 tsp2 tsp2 tsp Vanilla Extract
- 222 Eggs, large
- 1.25 cups1.25 cups1.25 cups Potato Starch
- 3 cups3 cups3 cups Almond Flour, bleached and extra fine
- 1 tsp1 tsp1 tsp Baking Soda
- 1 tsp1 tsp1 tsp Salt
- 1 cup1 cup1 cup Semi-Sweet Chocolate Chips
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350℉.
- Line a baking sheet with parchment paper.
- In a large mixing bowl, mix the sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Add in the potato starch, almond flour, salt, and baking soda.
- Fold in the chocolate chips.
- Freeze for 15-20 minutes.
- Drop heaping tablespoon-sized dough onto the prepared baking sheet, spacing them 2-3 inches apart.
- Bake for 10-12 minutes until the edges are golden brown and the middle is soft.
- Remove from the oven and let cool.
Notes
These cookies are easy to make in a half batch. You can also freeze the dough, in dough balls, and bake them when you want them. Make sure to spread the dough balls out on the sheet pan! They spread a lot more than you think they will. To get them looking nice, I only put 9 on a sheet the last time I tested them.
