Easy Sheet Pan Chicken & Sweet Potatoes (Edit recipe)

I’m making it a goal to remember how convenient and delicious sheet pan dinners are. All you need is a protein, some veggies, and your favorite spice blends. Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the cubed sweet potatoes and sliced onions with 1 tablespoon of olive oil, 1 tablespoon of steak seasoning, and 1 teaspoon of paprika. Toss to coat well. On a parchment lined baking sheet, spread them evenly on both sides, leaving room in the center for the chicken.
  3. Add the chicken to the center of the baking sheet. Drizzle 1 tablespoon of olive oil, 1 tablespoon of steak seasoning, and ½ teaspoon of paprika over one side of the chicken breasts. Flip the chicken over and drizzle with the remaining 1 tablespoon of olive oil, 1 tablespoon of steak seasoning, and ½ teaspoon of paprika. Spread the chicken out so the pieces aren’t overlapping.
  4. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the sweet potatoes are tender and slightly caramelized around the edges.
  5. Let the chicken rest for a few minutes before slicing and enjoy warm!

Notes

Feel free to adjust the seasoning to your taste. The paprika will add some heat, so you can use less if you prefer a milder flavor. Similarly, you can reduce the amount of steak seasoning if you’d like a more subtle taste.
