Eggnog Gummies (Edit recipe)

I wanted to find a more portable way to bring my own eggnog into work for lattes. Inspired by something I saw from our friend’s at Pete’s Paleo and their gut healing kit, the answer hit me all at once. Why not make eggnog in gummy form? That way I can still have my lattes once I get to work AND heal my gut in the process. They came out perfect. Nice and firm for a go to snack and will still melt easily when added to hot coffee. I can’t imagine NOT making these over and over again.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat egg nog in a medium saucepan over medium-low heat, stirring occasionally, until mixture begins to bubble around the edges.
  2. Pour heated egg nog into a blender and add gelatin.
  3. Blend on high to combine gelatin and egg nog.
  4. Remove lid from blender and allow to cool for about 15 minutes.
  5. Pour egg nog and gelatin mixture into silicone molds or 9x9 baking dish and refrigerate overnight.
  6. Enjoy in coffee or as a standalone snack!
