Eggnog Bundt Cake
Easy and festive dairy-free eggnog bundt cake using a cake mix and covered with an eggnog glaze. Great for a simple but totally delicious holiday dessert.
Ingredients
- 1 whole1 whole1 whole Yellow Cake Mix, dairy-free & gluten-free if needed
- 1 whole1 whole1 whole Simply Delish Natural Instant Vanilla Pudding, 1 package
- 1.5 tsp1.5 tsp1.5 tsp Nutmeg
- .5 tsp.5 tsp.5 tsp Sea Salt, fine
- 1 cup1 cup1 cup Vegan Eggnog, room temperature, may use dairy-free or regular
- 4 whole4 whole4 whole Eggs, large, room temperature
- .25 cup.25 cup.25 cup Vegan Eggnog, room temperature, may use dairy-free or regular
- 1 tsp1 tsp1 tsp Vanilla Extract
- .25 cup.25 cup.25 cup Plant Based Butter, melted, may use dairy-free or regular; salted
- .25 cup.25 cup.25 cup Vegan Eggnog, room temperature, may use dairy-free or regular
- .5 tsp.5 tsp.5 tsp Rum Extract, *optional
- 2 cups2 cups2 cups Powdered Sugar
- .5 tsp.5 tsp.5 tsp Nutmeg
- .5 tsp.5 tsp.5 tsp Sea Salt, fine
- 0.25 cup0.25 cup0.25 cup Sprinkles, optional: Sprinkle Pop “Christmas Traditions”

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 degrees and generously spray the bundt pan with non-stick cooking spray.
- In the bowl of a stand mixer combine the cake mix, pudding mix, nutmeg, and salt together with the whisk attachment.
- Add in the eggnog, eggs, yogurt, and vanilla, and mix until combined.
- Pour the batter into the bundt pan and bake for 45-50 minutes or until a toothpick comes out with a few crumbs.
- Cool in pan for 10 minutes and then invert on a cooling rack to fully cool.
- In the bowl of a stand mixer combine all the ingredients and whisk until combined and smooth.
- Place the cooled bundt cake on a plate or cake stand.
- Slowly pour the glaze over the top of the bundt cake.
- Top with fun festive sprinkles. Enjoy!
