Fudgy Chickpea Blondies
These chickpea blondies are a healthy, gooey, and fudgy sweet treat that you will be obsessed with. They are also so easy to make, and I promise, no one will taste the chickpeas.
Ingredients
- 1.5 cup1.5 cup1.5 cup Chickpeas, 1 can, rinsed and peeled
- .333 cup.333 cup.333 cup Cashew Butter, runny
- .25 cup.25 cup.25 cup Almond Flour
- .25 cup.25 cup.25 cup Medjool Date Syrup
- 1 Tbsp1 Tbsp1 Tbsp Vanilla Extract
- .25 tsp.25 tsp.25 tsp Baking Powder
- .25 tsp.25 tsp.25 tsp Salt
- .5 cup.5 cup.5 cup Dark Chocolate Chips
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees Fahrenheit
- Rinse the chickpeas and pinch the skins off. It’s extra but worth it!! Try rubbing them together or in a towel
- Add all the ingredients except the chocolate to a food processor and process until smooth
- Mix in the the chocolate
- Pour into prepared 8x8 pan and bake for 20 minutes
- Let cool for 30 minutes to set or longer and enjoy!
