Leek Lemon Feta Salmon (Edit recipe)

This is absolutely my favorite salmon recipe-and as a salmon lover, I’ve made a lot! The feta, capers, and lemon butter flavors are a match made in heaven. Whether you love salmon or not, this is simply a must make, especially if you love Mediterranean food.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 400 degrees Fahrenheit and prepare salmon in baking dish, season with salt and pepper
  2. In a pan, melt butter. Remove from heat and add lemon juice and zest, whisk together
  3. Pour lemon butter on salmon and bake for 15 minutes
  4. While baking, cut off the darkest top part of the leek and set aside for later
  5. Cut the white and light grain part of the leeks into thin slices, rinse or soak off any dirt
  6. In a pan over medium heat*, add the sliced leeks, and cook for 7-8 minutes or until leeks have softened
  7. Finely chop the darkest part of the leek saved
  8. In a medium bowl, add the cooked leeks, the chopped leeks, parsley, capers, garlic, crushed red pepper, olive oil, red wine vinegar, and salt. Mix together, add in feta and lightly mix
  9. Top salmon with leek salsa and serve

Notes

I used Zimm’s Organics olive oil and my my Caraway pan that does not need oil, if you want, add some to sauté the leek. You can use code “LIVNATURALLY” for 10% off caraway
