Gimlet Cocktail (Gluten Free)
This is one of those drinks my husband has become known for when it’s cocktail time. While gimlets are typically made with gin, I prefer mine with vodka, and this recipe works beautifully either way. It starts with a homemade lime cordial that needs a full 24 hours to steep, but once it’s made ahead, the drinks come together with a quick shake. If you enjoy this one, you should also try Dave’s other favorite to make, his jalapeño passion fruit margaritas.

making the lime cordial
- Zest and juice 10 limes. Measure the juice, then add an equal amount of sugar (for example, 2 cups juice = 2 cups sugar).
- Mix lime juice, zest and sugar together in non-metal bowl with non-metal spatula/spoon until sugar dissolves fully (can take around 5 minutes). Cover and let sit at room temperature for 24 hours.
- Strain using a nut milk or cheesecloth bag into non-metal container.
making the gimlet
- Combine 2 oz vodka or gin with 1 oz lime cordial. Shake hard with ice in a cocktail shaker, then strain into a coupe glass. Garnish with a lime slice or wedge.
Notes
Using non-metal bowls and utensils is key so the citrus can rest without reacting as it sits.
