Gluten Free Breakfast Cookies (Edit recipe)

Did someone say cookies for breakfast?! These are so easy to make a big batch of at once and have on hand to enjoy a couple at a time throughout the week. They're so versatile because you can add (or omit!) just about anything - dark chocolate, nuts, dried fruit, flax seeds, chia seeds. You get the idea! These can be mixed up in a single bowl, so it makes cleanup a breeze.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 375°.
  2. Prepare a baking sheet with parchment paper.
  3. In a large bowl, mash the bananas, then add in the vanilla extract and cinnamon. Give it a quick mix.
  4. Add in the oats, chocolate chips, peanut butter, chia seeds and salt. Mix everything together until all ingredients are fully incorporated.
  5. Using a cookie scoop, lay your cookie mix in a single layer about 1 inch apart. The "batter" may be fickle and might look like it'll fall apart, but give it a gentle little press if needed to keep everything together
  6. Bake for about 13-15 minutes or until your desired doneness.
  7. Enjoy while still warm or at room temperature.

Notes

Another recipe that you can measure with your heart! Typically, about 1 cup of oats and 2 large bananas is a good base, and from there, you can really go crazy with your fix-ins. In addition to easily being made gluten free, they're great for anyone who needs to be egg free or dairy free - just choose your favorite dairy free chocolate chips if you're adding them.
