Gluten Free Rice Crispy Treats (Edit recipe)

Crispy rice treats are universally loved—they’re crispy, gooey, and oh so nostalgic. The classic Rice Krispies contain malt syrup, making them not gluten free. For a gluten free version, simply use a gluten free brand of a crispy rice cereal. Some of my favorites are Nature’s Path or One Degree Organic, both of which work perfectly in this recipe.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Melt the butter in a large pot over medium-low heat.
  2. Once melted, add the bag of marshmallows and stir frequently until fully melted. Remove from heat.
  3. Add the vanilla extract and mix.
  4. Start by stirring in half of the crispy rice cereal until well combined, then add the remaining half and mix thoroughly. Transfer the mixture to an 8x8 baking dish lined with parchment paper.
  5. Use a spatula or another piece of parchment paper to gently press down on the treats to make them even. Avoid over-packing as that will make them chewier.
  6. Let them sit at room temperature for 1 hour before enjoying!

Notes

When melting the marshmallows, just be patient and make sure they’re completely melted before taking them off the heat. This will give you a smoother texture. When you mix in the cereal, do it gently but thoroughly to avoid overworking the mixture. And try not to pack it too tightly into the pan, or the treats might turn out too chewy. Let them sit at room temperature for about an hour to set, and then enjoy the delicious results! Cleaning tip: if marshmallow gets stuck in your pot, let it soak in hot, soapy water for a bit, then it should wipe clean easily!
