Gluten Free Mac and Cheese
This homemade Gluten Free Mac and Cheese Recipe satisfies those comfort cravings, and is perfect for a weeknight meal or holiday side dish.
Ingredients
- 111 Pasta, Box Gluten Free Elbow (8oz)

- 2 Tbsp2 Tbsp2 Tbsp Avocado, Oil (neutral tasting; I use Oil.)
- .5 cup.5 cup.5 cup Butter, Unsalted

- 6 Tbsp6 Tbsp6 Tbsp Gluten-Free 1-to-1 Baking Flour - Bob's Red Mill
- 4 cups4 cups4 cups Cheddar Cheese, (shredded; Best results using a block and shred yourself.)

- 8 oz8 oz8 oz Gruyere Cheese, (shredded)

- 3 cups3 cups3 cups Milk

- 1 cup1 cup1 cup Heavy Whipping Cream
- .75 tsp.75 tsp.75 tsp Salt

- 1 cup1 cup1 cup Panko Bread Crumbs, Gluten Free
- 4 Tbsp4 Tbsp4 Tbsp Butter, Unsalted, melted

- .5 cup.5 cup.5 cup Parmesan Cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Boil water in a large stockpot, then cook pasta for 2 minutes less than called for on package instructions. The pasta will continue cooking when baking in the casserole.
- Drain pasta , then return to the pot and toss with 2 tbsp of oil.
- Shred cheeses and mix together in a large bowl.
- In a separate stovetop pan, melt butter on low heat then stir in gluten free flour to create a roux. Add milk and heavy cream, stirring until smooth.
- Add 4 cups of the cheese, stirring until sauce is thickened.
- Add cooked pasta and stir until combined.
- Lightly grease a 9x13 casserole dish and pour in half of the cheesy pasta mixture.
- Layer with the remaining shredded cheese, then top with the rest of the pasta mixture.
- In a small bowl, mix the topping ingredients together, then sprinkle evenly across the top of the casserole.
- Bake at 350u00b0 for about 20-30 minutes until the top is golden and the casserole is bubbling.
Notes
If you will be preparing this macaroni and cheese casserole ahead of time, follow all instructions but do not bake. Cover with foil and store in the fridge for up to 2 days.
