Gluten Free No-Bake Pecan Clusters (Edit recipe)

If you're anything like me, baking feels like a science experiment that is way too complex that no matter how many instructions I follow or how many mixes I try to use, I'll be the one to screw it up...so when it comes to a treat that doesn't require the oven, you can count me in! These no-bake pecan clusters are only TWO ingredients (three if you count the salt on top) and just require some chocolate melting and freezer magic to be ready.

Ingredients

  • 2 cups Pecans, whole
  • 0.5 cup Dark Chocolate
  • 1 pinch Salt, (flaky, Himalayan or whatever you have on hand!)

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Fully melt your dark chocolate. You can do this on a double boiler or in the microwave.
  2. Add the pecans to the melted chocolate and toss so that they're fully coated on all sides (this is crucial so the clusters can form when the chocolate sets!)
  3. On a parchment lined baking sheet, make clusters with about 5 pecans, then sprinkle a little salt on top.
  4. Pop into freezer laying the baking sheet flat for about 2 hours or overnight. Keep them stored in the freezer and enjoy!
