Gluten Free Spiced Wafers

Ingredients

- 2 tsp2 tsp2 tsp Ginger, Ground

- 1 tsp1 tsp1 tsp Cloves, Ground
- .5 tsp.5 tsp.5 tsp Allspice, Ground
- .5 tsp.5 tsp.5 tsp Nutmeg
- 111 Egg
- 8 Tbsp8 Tbsp8 Tbsp Butter, Unsalted, softened

- 3 Tbsp3 Tbsp3 Tbsp Olive Oil

- .333 cup.333 cup.333 cup Molasses

- Preheat the oven to 350u00b0. Line a large baking sheet with parchment paper.
- Using an electric mixer, cream the butter, oil and sugar on medium speed.
- Add in the egg and molasses.
- Slowly add in the remaining dry ingredients and mix until well blended and the batter forms.
- Drop the dough by the tablespoon on to your prepared baking sheet. The cookies will spread so leave space between.
- Bake for 15-16 minutes. The cookies will be dark and golden, but watch closely not to burn. You will get maximum crunchiness the longer they bake!
- Remove from the oven and cool completely.
