Golden Baked Scalloped Potatoes

- 1 whole1 whole1 whole Yellow Onion, LARGE
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 Tbsp1 Tbsp1 Tbsp Onion Flakes (Dehydrated Onion)
- 1 Tbsp1 Tbsp1 Tbsp Garlic & Herb Seasoning - Spice Islands
- 1 tsp1 tsp1 tsp Barbecue Rub - Primal Palate
- 1 tsp1 tsp1 tsp Meat & Potatoes Seasoning - Primal Palate
- 2 tsp2 tsp2 tsp Sea Salt
- 1 Tbsp1 Tbsp1 Tbsp Italian Seasoning
- 1 tsp1 tsp1 tsp Coriander Cumin Seasoning - Paleovalley
- 1 tsp1 tsp1 tsp Mile High Steak Seasoning - Paleovalley
Cheesy Cream Mixture
- 0.666 cup0.666 cup0.666 cup Butter, Salted
- 0.666 cup0.666 cup0.666 cup All Purpose Flour
- 8 cloves8 cloves8 cloves Garlic, crushed
- 4 cups4 cups4 cups Heavy Whipping Cream
- 1 tsp1 tsp1 tsp Paprika
- 2 tsp2 tsp2 tsp Sea Salt
- 2.5 cups2.5 cups2.5 cups Pepper Jack Cheese
- 1 cup1 cup1 cup Panko Bread Crumbs, (I use homemade breadcrumbs toasted in butter and herbs, but classic panko work just fine)
- 1 bunch1 bunch1 bunch Cilantro, chop about 1/2 cup to garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Pre-heat oven to 350ºF.
- Peel and thinly slice potatoes and add them to a large mixing bowl.
- Peel and slice onion and add too the bowl with potatoes.
- Drizzle olive oil over top and coat in all of the seasonings above under "potato mixture".
- Add to a large casserole pan(9x13 or 11x15 for more room!).
- Then place a medium sized sauce pan on the stove over medium/low heat and melt butter.
- Add garlic and allow to cook for one minute until fragrant. Then add flour and whisk to combine.
- Slowly pour in cream, whisking quickly to thicken sauce.
- Then whisk in spices and add 2 cups pepper jack cheese.
- Once sauce is smooth and creamy, pour over potatoes and toss potatoes to coat evenly throughout the dish,
- Bake covered for 45 minutes.
- Then remove form oven and top with breadcrumbs, leftover cheese, and cilantro.
- Turn oven temperature up to 375ºF.
- Bake uncovered for another 15-20 minutes until golden brown and potatoes are tender.
- Remove from oven and serve warm.
