Grain-Free Sugar Cookie Sandwiches
Soft, chewy grain-free sugar cookies are perfectly married together with a dollop of your favorite homemade frosting in between. Make some festive fun and color different bowls of frosting with natural food dyes, or use different flavors of frosting for an instant cookie sandwich smorgasbord!
Ingredients
Cookies
- 1/2 cup1/2 cup1/2 cup Unsalted Butter, softened (or palm shortening for dairy-free)
- 1 cup1 cup1 cup Granulated White Sugar
- 111 Egg, (or 1 Tbsp gelatin)
- 1/2 tsp1/2 tsp1/2 tsp Vanilla Extract
- 2 Tbsp2 Tbsp2 Tbsp Unsalted Butter, melted
- 1 1/3 cups1 1/3 cups1 1/3 cups Otto’s Naturals Non-GMO Cassava Flour
- 1/4 tsp1/4 tsp1/4 tsp Baking Soda
- 1/4 tsp1/4 tsp1/4 tsp Cream of Tartar
Filling
- 1/4 cup1/4 cup1/4 cup Granulated White Sugar, topping
- Vanilla Frosting (Simple Mills), or 1 batch of your favorite homemade frosting
- Artificial Dye-Free Food Coloring

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 375°F and line baking sheets with parchment paper.
- In a large bowl combine softened butter (or shortening) and sugar using a hand mixer.
- Add egg, vanilla and melted butter to the butter and sugar mixture and mix until smooth.
- In a separate bowl add cassava flour, baking soda and cream of tartar and mix until combined.
- Combine dry ingredients into wet ingredients and mix well.
- Roll dough into tablespoon-sized balls and roll them in the granulated sugar topping.
- Place them on the baking sheets and gently flatten each ball. Bake for 6-8 minutes. Let the cookies cool on the pans for 3-5 minutes before transferring to a cooling rack. Cool completely before assembling the sandwiches.
- Pair the cookies into sets of two. Prepare your frosting and color it as desired using the natural food coloring. Place a tablespoon of the frosting between each pair of cookies to make the sandwiches.
