Green Caper Patties with Slaw on a Bed of Yogurt
These caper patties with a yogurt slaw are absolutely divine! They are simple, nutrient dense, vibrant, and packed for of flavor for dinner.
Ingredients
- 1 lb1 lb1 lb Ground Beef, or pasture-raised ground meat of choice
- 4 Tbsp4 Tbsp4 Tbsp Capers
- 2 cloves2 cloves2 cloves Garlic, minced
- 1 bunch1 bunch1 bunch Parsley, finely chopped
- .5.5.5 Lemon Juice
- .25 cup.25 cup.25 cup Olive Oil
- .25 tsp.25 tsp.25 tsp Salt
- 1 head1 head1 head Red Cabbage, grated
- 222 Beets, grated
- Plain Greek Yogurt, for spreading
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix together the parsley, garlic, lemon juice, olive oil, and salt
- Add the ground meat to a bowl and combine with 1/2 of the sauce
- Form into patties and refrigerate for 15 minutes
- Cook patties in skillet over medium heat for 8-10 minutes
- Dollop Greek yogurt on plate with extra lemon juice
- Top with cabbage and beet
- Top with patties and the rest of the sauce
