Beer Braised Beef
- Sear the meatHeat olive oil in a skillet over medium-high heat. Brown stew meat on all sides (don’t worry if it’s not fully cooked inside).
- Add aromatics & liquidLower heat, add garlic & onion, sauté 1–2 minutes. Pour in beer and sprinkle in seasoning.
- Simmer until tender: Cover and simmer on low heat for 1.5–2 hours, stirring occasionally, until meat is fork-tender. Remove meat and shred with forks or chop into bite-sized pieces (if need be). Toss back in a little braising liquid for extra flavor.
Spicy Tomato–Jalapeño Topping
- Heat olive oil in a small skillet over medium-low heat. You want gentle heat, not frying. Add sliced jalapeños and a pinch of salt. Sauté the jalapeños. Cook 3–5 minutes, stirring occasionally, until softened and lightly glossy (not browned).
- Add the freeze-dried tomatoes. Sprinkle in the crushed freeze-dried tomatoes. Stir to coat them in the oil and jalapeño juices.Cook another 3-5 minutes until the tomatoes slightly and release their aroma. Do not overcook — they should keep some texture.
- Taste and adjust salt.
Assemble The Sandwiches
- Top the sandwich: Pile the tender beef onto a pretzel bun, then spoon Beer-Cheese Sauce over the top. Add caramelized onions and Spicy Tomato–Jalapeño Topping
