Healthy Reese’s Eggs
Packed with a glorious peanut butter filling and covered in smooth dark chocolate, these Healthy Reese's Eggs are the most decadently delicious copycat of the classic. They're easy to make with just a few simple real-food ingredients and are naturally sweetened, vegan, and gluten-free.
Ingredients
- 1.125 cup1.125 cup1.125 cup Almond Flour, see notes
- 1 cup1 cup1 cup Creamy Peanut Butter, natural
- 6 Tbsp6 Tbsp6 Tbsp Pure Maple Syrup
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 cup1 cup1 cup Dark Chocolate Chips
- 1 Tbsp1 Tbsp1 Tbsp Coconut Oil
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a mixing bowl, combine almond flour, peanut butter, maple syrup, and salt. Stir until well combined. The mixture will be thick.
- Roll the mixture into balls and place on a parchment-lined tray. Press down a bit to spread them into circles. Use your fingers to push the edges inwards on one end of each circle to create an egg shape. Place in the freezer for 20-30 minutes to firm up.
- In a small bowl, combine chocolate chips and coconut oil. Microwave in 30 second intervals, stirring in between, until melted and smooth.
- Remove peanut butter eggs from the freezer. Use a fork to dip each one into the melted chocolate, letting any excess drip off, then place back onto the parchment. If you have leftover chocolate after dipping the eggs, you can drizzle it over the eggs, ideally once the coating starts to firm up a few minutes after dipping.
- Return to the freezer for 20 minutes for the chocolate to set. Let sit on the counter for a few minutes and enjoy!
Notes
These Reese's eggs are high protein as is. However, you can use protein powder to give them an extra boost. To make these into protein Reese's eggs, substitute the almond flour with 1/2 cup vanilla protein powder. Storage: Store in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months- thaw a few minutes to soften before eating.
