High-Protein Egg Bites
These high-protein egg bites are the perfect start to the day. They're simple to make, packed with protein, and easily customizable. The best part is that you can use your favorite add-ins to switch it up each week and keep your tastebuds guessing.
Ingredients
- 8 whole8 whole8 whole Eggs
- 1 cup1 cup1 cup Organic Cottage Cheese, *can sub silken tofu for dairy-free
- 1 tsp1 tsp1 tsp Salt
- 1 cup1 cup1 cup Arugula, chopped
- 0.666 cup0.666 cup0.666 cup Bell Pepper, diced
- 0.5 cup0.5 cup0.5 cup Onion, diced
- 4 pieces4 pieces4 pieces Deli Ham, diced
- 0.75 cup0.75 cup0.75 cup Mozzarella Cheese, shredded *can sub cheese of choice
- 1 pinch1 pinch1 pinch Black Pepper, to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350ºF and prepare a 12-cavity muffin pan with non-stick baking spray.
- Combine the eggs, cottage cheese (or tofu), and salt in a blender and pulse until smooth.
- Pour the egg mixture evenly into the 12 muffin cavities.
- Add the peppers, onion, ham, and arugula into each cavity.
- Top with shredded cheese and pepper.
- Bake for 20-22 minutes or until the egg bites are puffy and the center is fairly firm to the touch.
- Remove the egg bites from the oven and allow them to cool in the pan for 5 minutes before transferring them to a wire rack to fully cool. Note that the egg bites will deflate a bit once they start to cool. Enjoy!
- Store leftovers in an airtight container for up to 5 days or frozen for up to 3 months.
