Warm, hearty and so flavorful! My favorite cold weather dish…serve with rice or alone. Everyone will be running for seconds.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. 1. Chop your chicken breasts and season with curry powder and salt and pepper.
  2. 2. In a heavy pot heat up olive oils and sautee chicken pieces.
  3. 3. Once the chicken is cooked, remove the chicken from the pot and add your onions and sautee for 2 minutes.
  4. 4. Add your water to the pot to deglaze the pot.
  5. 5. Add the golden curry pieces. (I normally use mild and add extra spice to my own serving.)
  6. 6. Once the curry has come to a bowl and the curry paste has been completed dissolved add your carrots and potatoes to the pot.
  7. 7. Cook until almost cooked through and add back your chicken pieces and mushrooms.
  8. 8. Cook for 5-10 more minutes and enjoy!

Notes

I like to serve this with white rice and garnish with chives. I also like to top it with a little chili oil for some spice! We love a big pot of this…it makes amazing left overs I hope you enjoy!
