Kale Caesar Salad
Kale is a type of leafy green that is tougher and a lot chewier to eat. finding different ways to eat kale can be sometimes overwhelming trying to achieve great taste when not using a traditional romain. I've simply found a way to make kale chewable and enjoyable.
Ingredients
- 5 cups5 cups5 cups Kale, CURLY OR DINOSAUR
- 1 cup1 cup1 cup Breadcrumbs, or regular
- 5 Tbsp5 Tbsp5 Tbsp Mayonnaise
- 1 clove1 clove1 clove Garlic
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Red Wine Vinegar
- 0.5 whole0.5 whole0.5 whole Lemon, + ZEST
- 0.5 cup0.5 cup0.5 cup Parmigiano Reggiano
- 1 Tbsp1 Tbsp1 Tbsp Anchovy Paste, OPTIONAL
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Avocado Oil, to massage kale with
- .5 tsp.5 tsp.5 tsp Salt, add to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- wash and dry your kale.
- cut to desired size and massage kale with oil for 1-2 mins.
- in a bowl, add your mayo, garlic ,vinegar, lemon &cheese.
- anchovies are optional.
- season with salt if necessary.
- toss dressing in salad and add your croutons.
- mix and serve or refrigerate.
- serve and enjoy.
