- In a mini food processor or blender, combine the cottage cheese, egg, and vanilla extract. Blend until smooth and creamy.
- Add coconut flour, pistachio butter, sweetener, and baking powder. Blend again until fully combined and smooth. The batter will be thick and spoonable.
- Preheat a Mini Donut Maker or lightly grease with a non-stick spray a donut pan. Spoon or pipe the batter (donut dough) in and cook for about 3u20134 minutes until golden brown and set. If using the oven, bake at 350u00b0F (175u00b0C) for 15u201318 minutes. Transfer to a cooling rack.
- Melt chocolate chips with coconut oil (or more pistachio butter) in a small bowl until smooth. Dip or drizzle over cooled donuts.
