Vegan Pistachio Mousse
This Vegan Pistachio Mousse is divine, nutty, and velvety smooth. It's a light yet rich dessert that comes together in no time with just 6 simple ingredients. No dairy, refined sugar, or artificial colors to be seen here! This mousse is packed with pistachio flavor and is downright delicious.
Ingredients
- 2 cups2 cups2 cups Coconut Cream, from 2 (13.5 oz ) cans of full fat coconut milk
- 6 Tbsp6 Tbsp6 Tbsp Pistachio Butter
- 6 Tbsp6 Tbsp6 Tbsp Pure Maple Syrup
- 2 tsp2 tsp2 tsp Vanilla Extract
- 1 tsp1 tsp1 tsp Matcha Green Tea Powder, for a more vibrant color, optional
- 1 pinch1 pinch1 pinch Salt
- 0.5 cup0.5 cup0.5 cup Coconut Whipped Topping, I used So Delicious CocoWhip
- .25 cup.25 cup.25 cup Pistachios, Raw, finely chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Before making the recipe, place two unopened cans of full fat coconut milk in the fridge for at least overnight but ideally 24 hours.
- Once chilled, carefully open the cans, without shaking them, and scoop the thick cream off the top. Each can will have about 1 cup of coconut cream. Save the coconut water at the bottom for smoothies or other recipes.
- Add the coconut cream to a medium mixing bowl. Using a hand mixer or stand mixer, beat the cream on medium speed until smooth and fluffy, about 30 seconds (do not overbeat).
- Add pistachio butter, maple syrup, vanilla, matcha (if using), and salt. Beat until combined and creamy, about 30 seconds.
- Divide the mousse into 4-6 dishes and let chill in the fridge for at least 1 hour.
- Top with coconut whip and finely chopped pistachios if desired, and enjoy!
Notes
Storage: Cover leftover mousse with plastic wrap or transfer to an airtight container and store in the fridge for up to 4-5 days.
