Lemony Cabbage Salad
This salad was something I tasted at my mom's friends house. I have no idea where she got the recipe from but it's now something me and my mom both make a lot!
I added the poppy seeds and for a twist dijon mustard for added zing to the salad!
When I had it the first time it was served as a side salad and I think it could be a great addition to any dinner. It holds up well in the fridge, so don't worry about leftovers. But if you are not going to be many people half the recipe. It’s also a terrific replacement for boring coleslaw at a BBQ.
Ingredients
- 111 Green Cabbage, chopped
- 111 Hearts of Palm, one jar, drained and sliced
- 5 sprig5 sprig5 sprig Green Onion (Scallion), thinly sliced (both green and white parts)
- 222 Lemon, juiced
- .5 cup.5 cup.5 cup Mayonnaise - Primal Kitchen
- 1 Tbsp1 Tbsp1 Tbsp Poppy Seeds
- 1 pinch1 pinch1 pinch Kosher Salt, to taste
- 1 pinch1 pinch1 pinch Black Pepper, to taste
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard, optional

- Mix the cabbage, scallions, and hearts of palm together in a large salad bowl.
- In another small bowl mix together the lemon juice, mayonnaise, poppy seeds, salt, and pepper (and mustard if you desire).
- Whisk the dressing together well.
- Pour onto the salad.
