Life-Changing Almond Thumbprint Cookies
These are one of the first recipes I ever made on my site and still one of my absolute favorites! Not only do they make a super tasty dessert, but they're also nutritious enough to enjoy as an energizing snack or even breakfast. You'll only need a handful of ingredients to bring these to life, including jam of choice (which is the best part, of course). I personally love the Crofter's Just Fruit Spread to cut down on the added sugar without sacrificing any of the flavor. I know y'all will love these as much as we do!
Ingredients
- 4 cups4 cups4 cups Almond Flour
- 3 cups3 cups3 cups Almonds, crushed in a food processor (about ten-two second pulses), or finely chopped
- 1 cup1 cup1 cup Coconut Oil, melted
- 1 cup1 cup1 cup Pure Maple Syrup
- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground
- 1 Tbsp1 Tbsp1 Tbsp Pumpkin Pie Spice
- 1 tsp1 tsp1 tsp Salt
- 10 oz10 oz10 oz Raspberry Jam, or jam of choice, 1 jar
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350°F.
- Line two baking sheets with parchment paper. Combine all of the ingredients (besides the jam) in a large bowl.
- Scoop out dough (about 2 tablespoons), rounding them with your hands into balls before spacing evenly on baking sheets.
- Use your thumb to make an indentation in your balls of dough, and fill each with a small spoonful of jam.
- Bake cookies for about 20 minutes or until evenly browned. The cookies will be soft out of the oven, so allow to cool completely before removing and plating or storing (I recommend in the fridge or freezer). They will harden as they cool. Enjoy!
