Loaded Kale Salad with Tahini Dressing
This recipe is simple to throw together and a great way to diversify your diet! The creamy dressing pairs well with the variety of crunchy textures.
Ingredients
Salad Ingredients
- 1 bunch1 bunch1 bunch Kale, chopped
- 1 bunch1 bunch1 bunch Radish, thinly sliced
- 1 whole1 whole1 whole Apple, Green, diced
- 3 whole3 whole3 whole Green Onion (Scallion), chopped
- 1 whole1 whole1 whole Avocado, diced
- 3 cups3 cups3 cups Quinoa, cooked, I use sprouted for easier digestion
- 1 lb1 lb1 lb Chicken Breast, chopped, I use pasture-raised
Dressing Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- .25 cup.25 cup.25 cup Tahini
- 2 Tbsp2 Tbsp2 Tbsp Coconut Aminos
- 1 tsp1 tsp1 tsp Pickled Onions, I used the juice, optional, try my sugar free recipe!
- .5 whole.5 whole.5 whole Lemon, juice of
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add dressing ingredients to a large bowl and mix.
- Add the chopped kale and massage into dressing for 5 minutes.
- Add the rest of the ingredients, except the avocado, and toss.
- Top with avocado and enjoy!
