loaded mashed cauli-potato bowls
the epitome of comfort food - a loaded mashed potato bowl! this version swaps traditional mashed potatoes for my fool proof, easy-peasy, instant pot mashed cauli-potatoes. a great way to sneak in some extra veggies & fiber, without sacrificing flavor! it is then loaded with bbq chicken, sautéed veggies, BACON (my fav part), & cheddar cheese. seriously friend, you are going to love this bowl!
Ingredients
instant pot mashed cauli-potatoes
- 1.5 lb1.5 lb1.5 lb Cauliflower, cut into florets
- 1 lb1 lb1 lb Potatoes, Russet, diced
- Water, enough for covering the veggies
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 2 oz2 oz2 oz Cream Cheese, Full Fat
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 1 tsp1 tsp1 tsp Salt and Pepper, to taste
bbq chicken
- Bacon Grease, or fat of choice
- 2 lb2 lb2 lb Chicken Thighs, Boneless Skinless, cut into 1/2" cubes
- 1 Tbsp1 Tbsp1 Tbsp Barbecue Rub - Primal Palate
- 0.5 cup0.5 cup0.5 cup No-Sugar Hickory BBQ Sauce - Yo Mama's Foods
- 0.25 cup0.25 cup0.25 cup Water
bowls
- Bell Pepper and Onion Blend, Frozen
- Frozen Corn
- Black Beans, drained & rinsed
- easy baked bacon (click for recipe), crumbled
- Cheddar Cheese, shredded
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
instant pot mashed cauli-potatoes
- add potatoes, cauliflower, & enough water to cover veggies to instant pot.
- set instant pot to manual, high pressure for 12 minutes.
- when finished, turn valve to quick release & drain all water.
- add greek yogurt, cream cheese, garlic powder, onion powder, salt, & pepper to drained cauliflower & potatoes.
- using a hand mixer or immersion blender, whip potatoes until mashed & combined.
bbq chicken
- in a large skillet, add fat of choice & melt.
- in a bowl, mix together chicken thighs & bbq seasoning.
- add in chicken thighs to skillet; cook for 6-8 minutes; add in bbq sauce & water; simmer for 5-6 minutes or until chicken is cooked through.
bowls
- in a skillet, saute frozen peppers, onions, & corn.
- heat black beans, cook bacon, & shred cheese to have ready for building your bowl.
- to build bowl, first add a helping of mashed cauli-potatoes; then layer on black beans, sautéed veggies, bbq chicken, bacon, & cheddar cheese.
- microwave or broil bowls for 2-3 minutes to allow cheese to melt.
