charcuterie nachos have been everywhere lately, so of course i had to do my thing. took those snack board vibes you love & turned them into a healthy, feel-good dinner that still brings the fun. siete chips for the perfect crunch, juicy bites of chicken, all the charcuterie goodies, & kosterina? fully crushed it (literally) with that tangy hit. it’s craveable, nourishing, kinda bougie, & basically an easy girl picnic in a skillet.

balsamic reduction

  1. whisk vinegar & sweetener together in a small saucepan.
  2. bring to a boil, then reduce to a simmer for 8–10 minutes, stirring occasionally, until thickened.
  3. remove from heat & let cool slightly — add a splash of water if it gets too thick.

caramelized onion jam

  1. in a large skillet over medium heat, sauté sliced onion until soft & translucent.
  2. in a small bowl, mix remaining jam ingredients, then add to skillet.
  3. stir to combine & simmer for 8–10 minutes, adding water as needed to prevent sticking.
  4. reduce heat to low & let it jam up while you make the chicken.

chicken

  1. heat your fat of choice in a large skillet over medium-high.
  2. season chicken thighs with salt & pepper, then add to skillet. cook for 6–8 minutes, stirring occasionally.
  3. pour in vinegar, monk fruit, & water. stir to coat.
  4. reduce heat & simmer for 5–6 minutes more, until chicken is cooked through & sauce is slightly glossy.

building the nachos

  1. to a plate, first add siete potato chips.
  2. top with chicken, caramelized onion jam, veggies, meats, parmesan, & fresh basil.
  3. finish with a drizzle of balsamic reduction, red pepper flakes, & more herbs if you like.
