if you’re feeling authentic, you may call it esquites. if you live in the midwest… you probably just call it mexican street corn dip 😂🌽

either way — it’s simply delicious! in my version, we are caramelizing corn, peppers, onions, & green chiles. then it gets folded into a creamy, protein-boosted base of cottage cheese + greek yogurt + cotija, with my favorite siete jalapeño botana sauce for even more punch. then i load it up with jalapeños, tomatoes, cilantro, bacon (if you really want to elevate the hell out of it), & more cotija cheese!

it’s creamy. smoky. tangy. a little spicy. & unlike the usual version, this one actually has some staying power thanks to the protein boost.

scoop it up with your favorite beef tallow corn tortilla chips & prepare for the bowl to disappear fast. 🌽🔥

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a large skillet, add corn, peppers, onions, & green chiles.
  2. turn heat as high as it can go, then leave the veggies ALONE (lol, but stay close by).
  3. once you start to notice veggies start to brown & moisture evaporate, turn heat down to medium.
  4. pour in a little water to pick up a little of the caramelization on the bottom & continue to cook until fully caramelized.
  5. transfer veggies to a bowl, then completely cool.
  6. add all ingredients for sauce to a food processor, then add to cooled veggies along with jalapenos, tomatoes, cilantro, bacon, & cotija cheese.
  7. serve with your favorite tortilla chips & veggies for dipping.
