Mini Chocolate Chip Veggie Pancakes
These mini pancakes are so perfect for your picky toddlers. They actually have two hidden veggies in them, but I promise, your kids will never know. Plus, they’re mini size. I swear, the kids just love anything that’s mini.
Ingredients
- 1 whole1 whole1 whole Egg
- 0.25 cup0.25 cup0.25 cup Cottage Cheese
- 0.5 cup0.5 cup0.5 cup Carrots, Shredded
- .5 cup.5 cup.5 cup Zucchini
- 0.25 cup0.25 cup0.25 cup Milk

- 0.5 cup0.5 cup0.5 cup Pancake Mix, Kodiak Pancakes

- 0.5 cup0.5 cup0.5 cup Baking Chocolate Chips

- In a blender, add your eggs, carrots, zucchini, cottage cheese and milk. Blend together. Pour into a mixing bowl and whisk in the pancake mix.
