omelet egg muffins
a classic omelet - peppers, onions, ham, & cheese, made into easy meal prepped egg muffins. these are a perfect grab & go breakfast option to have on hand. plus, they are super customizable, so feel free to mix & match any meats, veggies, cheeses, & more in there!
Ingredients
- 16 - 1816 - 1816 - 18 Eggs
- 1 cup1 cup1 cup Cottage Cheese
- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 1 tsp1 tsp1 tsp Salt and Pepper
- 16-20 oz16-20 oz16-20 oz sautéed frozen vegetables (click for recipe), I used peppers & onions
- 12 oz12 oz12 oz Deli Ham, or any cooked protein of choice, finely chopped
- 4-6 oz4-6 oz4-6 oz Cheddar Cheese, or shredded cheese of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat the oven to 350.
- in a blender, blend eggs, seasonings, & cottage cheese.
- in a skillet, sauté peppers & onions (veggies of choice).
- add diced ham (or protein of choice) to skillet & fry until ham is a little crisp.
- add veggies, meat, & cheese into 24 muffin tins (a silicon muffin tin works best).
- pour equal amount of egg mixture into each cup.
- using a toothpick, mix together each cup so well distributed.
- bake the egg muffins for 18-22 minutes or until eggs are set.
- serve with your favorite hot sauce or salsa.
Notes
after making these, I like to place them on a baking sheet, freeze them, then store them in the freezer to pull out at anytime. also, if you haven't invested in good silicon muffin tins, I HIGHLY recommend. they make clean up SOOO easy. my absolute favorite are the trudeau brand!
