Open Faced Green Chili Burrito (Edit recipe)

One of our families most favorite ways to enjoy leftover GREEN CHILI BURRITOS and since this was also my mom's uncanny trick for using up leftovers efficiently, it's on the list of "comfort food" meals for me! One of the best things about this is that all the ingredients can be used right from the refrigerator since the oven does all the work warming everything up! Those crispy edges around the outside are my favorite part, not gonna lie. Do I eat the entire outer edge first--you better believe it! In the event I can't finish the entire platter!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat your oven to 385°.
  2. Place each of the tortillas in the bottom of a pie plate or other shallow baking dish, pressing into the bottom so the edges of the tortillas are coming up along the sides. You want this to happen for those crispy edges!
  3. Spoon and spread half of the beans onto each tortilla, followed up by half of the green chili that you will also spread evenly on top of the beans. Sprinkle of half of the cheddar cheese on top of each as well as some of the green onions if desired and even some sour cream if that's your jam.
  4. Place in the preheated oven and warm/bake until edges are golden and crispy and toppings/cheese are bubbly, can take anywhere from 12-20 minutes depending on your oven, see Notes below for Air Fryer tips.
  5. Remove from the oven and either allow to cool slightly before serving directly from the pie plate or carefully remove to a large plate. Top with garnishes, as desired, sprinkling half of each of them on top of each and enjoy!

Notes

I like to cook mine in my AIR FRYER, which typically takes about 5-7 minutes at 385° - traditional oven times typically do take a little longer. You can also try warming under your broiler, just keep an eye on them as they will go from "ready to enjoy" to "burnt" very quickly that way.
