Taco Bell Mexican Pizza (copy cat recipe)
Fast food, but make it elevated! One of my childhood favorites from Taco Bell, their "Mexican Pizza" that is 100% not really a pizza. I feel like it's more of a double decker tostada, which is probably why I love it so much. This is a meal that comes together quickly because I keep my SOURDOUGH TORTILLAS on hand (in both 6" and 10" size) and use a couple other Siete Foods products. I love using their vegan RERIED BEANS mixed with their VEGAN CHARRO beans, all topped off with their RED ENCHILADA SAUCE!
Ingredients
- 8 whole8 whole8 whole Sourdough Flour Tortillas (click for recipe), the 6" variety vs the 10"
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Avocado Oil Spray, little spritz for each tortilla
- .5 - 1 cup.5 - 1 cup.5 - 1 cup Vegan Refried Pinto Beans - Siete Foods
- .5 - 1 cup.5 - 1 cup.5 - 1 cup Vegan Charro Beans - Siete Foods
- .25 - .33 cup.25 - .33 cup.25 - .33 cup Red Enchilada Sauce - Siete Foods
- White Cheddar Cheese, grated
- Black Olives, sliced
- Roma Tomato, diced
- Cotija Cheese, crumbled
- Green Onion (Scallion), sliced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Begin my prepping your toppings of choice, then set aside.
- Combine the refried beans and charro beans in a small saucepan and warm over medium low heat, stirring occasionally until fully combined and heated through so that it's a nice spreadable consistency. In a small saucepan, heat up the enchilada sauce til just bubbly, remove both pans from the heat and set aside.
- Prepare tortillas by giving them each a quick spritz of avocado oil then brushing to evenly coat both sides. I toast mine in my air fryer but you could also broil them in your oven, turning to toast both sides as desired.
- Time to assemble and eat! If beans and sauce are not still warm, quickly place back on the heat to warm. Place one toasted tortilla on a plate, spread about 3-4 tablespoons of beans evenly over the top to the edges, top with a bit of grated cheese then top with another tortilla. Spoon warm enchilada sauce over the top. Garnish with additional cheese and toppings as desired. Repeat with remaining tortillas, beans, sauce and toppings.
- Serve and enjoy immediately! I like to cut mine into quarters, but you can certainly dive in without cutting them.
