Pizzelle (paleo/gluten free)
The classic and delicate Italian waffle cookie, delectably delicious and oh so tasty! Serve as is or dust with powdered sugar for a simple yet elegant treat. Typically enjoyed for Christmas or Easter, but honestly they’re so delicious, we enjoy them anytime of year. The flavors of this cookie inspired my WAFFLE CONE GRANOLA in collaboration with Nana Joes Granola. I have been using Otto’s Cassava Flour in my kitchen for over a decade as well, my go-to Paleo baking flour!
Ingredients
- 1.5 cups1.5 cups1.5 cups Non-GMO Cassava Flour - 1 lb Bag - Otto's Naturals

- 2 tsp2 tsp2 tsp Grain-Free Baking Powder - Otto's Naturals

- .125 tsp.125 tsp.125 tsp Vanilla Baking SALT - am.Niccoli

- 3 whole3 whole3 whole Eggs, room temperature
- .75 cup.75 cup.75 cup Pure Maple Syrup

- .5 cup.5 cup.5 cup Coconut Oil, melted, slightly cooled - can sub butter

- 1 Tbsp1 Tbsp1 Tbsp Pure Vanilla Extract

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium bowl, whisk cassava flour and baking powder together, set aside.
- In another bowl, add eggs and maple syrup and mix with an electric mixer until well combined.
- Add melted butter and vanilla to egg/syrup mixture and continue mixing til all ingredients are well combined.
- Pour this mixture into the dry ingredients and using the mixer, slowly combine all ingredients. Cassava flour can be “poofy” when you mix it quickly, let it incorporate slowly at first then turn your mixer on faster to fully combine. The batter will thicken up a bit as it sits.
- Pre-heat pizzelle iron according to manufacturer’s directions and begin making* pizzelles.
- Makes approximately 24-30 pizzelles, but depending on how many you eat while you’re making them, quantities may be less!
Notes
Start with using 1 T of batter in your iron, this amount will vary depending on the brand you use and if you overfill and get some drippage, wait til the pizzelle has cooled and break excess off or use small kitchen scissors to trim as needed
