These plantain waffles are made with ripe plantains and cassava flour and flavored with cinnamon and vanilla.  They're paleo, vegan and allergy friendly.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Plug in your waffle iron to preheat.
  2. Slice your plantains and cut them into ½ inch coins.
  3. Place the plantains in your food processor (or blender) and blend until well pulverized.
  4. Add in the remaining waffle ingredients and blend until the mixture has a thick, consistent texture.
  5. Scoop ¼ cup batter onto your preheated mini waffle iron. (A large waffle iron works too, you'll just need more batter per waffle.)
  6. Cook until done.
  7. Repeat until all of the batter has been used up.

Notes

*Recipe works best with ripe plantains (yellow with many brown/black spots). Makes 7-8 mini waffles.
