Pollo Guisado (Puerto Rican Style Chicken Stew)
Pollo guisado is a savory stew made with braised chicken, potatoes and vegetables in a rich tomato sauce. It’s made different ways all over Latin America but what remains consistent about this dish is that it’s always comforting and delicious!
Ingredients
- 1 lb1 lb1 lb Boneless Skinless Chicken Thigh
- 1 lb1 lb1 lb meat only Chicken Drumstick, skinless
- 1 Tbsp1 Tbsp1 Tbsp Healthy Rican Adobo
- 1 tsp1 tsp1 tsp Healthy Rican Sazón
- 1 tsp1 tsp1 tsp Onion Powder
- 1 tsp1 tsp1 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp dried Oregano
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 1 tsp1 tsp1 tsp Granulated White Sugar

- 1 cup1 cup1 cup Tomato Sauce
- 1 Tbsp1 Tbsp1 Tbsp Chicken Boullion (Better Than Boullion concentrate)
- 1 tsp1 tsp1 tsp Hot Sauce (Frank's RedHot)
- 2 cups2 cups2 cups Water
- 2 cloves2 cloves2 cloves Garlic, crushed
- 1 whole1 whole1 whole Red Onion, halved
- 1 whole1 whole1 whole Green Bell Peppers, halved
- 1 whole1 whole1 whole Tomato, halved
- 0.25 cup0.25 cup0.25 cup Green Olives
- 2 whole2 whole2 whole Carrots, sliced
- 1 whole1 whole1 whole White Potatoes, cubed
- 0.25 cup0.25 cup0.25 cup Lime Juice
- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Clean chicken and remove skin and any excess fat. Season chicken generously with adobo, onion powder, garlic powder, oregano, black pepper.
- Add oil to a large pot over medium high heat. Add sugar and allow it to brown. Add chicken and brown on all sides. Allow the chicken to turk dark brown but be careful not to burn.
- Add sofrito, chicken bouillon and tomato sauce. Cook until it becomes fragrant. Add vegetables and enough water to cover the chicken fully.
- Cover the pot and simmer for 30-45 minutes until the chicken and vegetables are tender. You may remove the large pieces of vegetables such as the onion, pepper, tomato, if desired.
- Taste the sauce, adjust seasoning as necessary. I like to add a splash of lime juice at this point to enhance the flavor.
