These pizza pocket hearts are so delicious and easy to make! I love incorporating sweet potatoes into my pizza dough as they are an excellent source of vitamin A, high in fiber, and sustainably grown. Feel free to use organic russet potatoes instead!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Peel and boil sweet potatoes until tender, about 30-40 minutes.
  2. Mash with a fork or potato masher. Once cool, pack potato into measuring cup.
  3. Add mashed potato to a bowl, along with flour and seasonings. Combine until a dough is formed. If dough is too sticky, add a little more flour.
  4. Roll out the dough and use a heart-shaped cookie cutter to cut out hearts. Place on a parchment-lined baking sheet.
  5. Add sauce, pepperoni, and cheese to half of the hearts. Place other half of dough heart on top and use a fork to seal the edges all around the hearts.
  6. Bake at 400F for 15-17 minutes and ENJOY!
