Protein Pumpkin Kiss Cookies

Ingredients
- 0.5 cup0.5 cup0.5 cup BochaSweet (sugar replacement), Trivia baking blend
- 2 whole2 whole2 whole Eggs
- 2 tsp2 tsp2 tsp Molasses
- 75 grams75 grams75 grams Vanilla Protein Powder
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 tsp1 tsp1 tsp Baking Soda
- 2 Tbsp2 Tbsp2 Tbsp Pumpkin Pie Spice
- 3 cups3 cups3 cups All Purpose Flour
- 36 whole36 whole36 whole Bittersweet Chocolate, Hershey kiss

- Preheat oven to 375 degrees F.
- In a mixing bowl, beat together pumpkin and Truvia Baking Blend until fluffy.
- Beat in eggs and molasses until well combined.
- Add vanilla protein powder, salt, baking soda, pumpkin pie spice and flour and mix until combined.
- Use a cookie scoop or roll dough into balls (1.2 ounces each) and place on a baking sheet sprayed with nonstick cooking spray or lined with parchment paper or a silicone baking mat.
- Bake for 8-9 minutes, or until lightly golden brown on the edges.
- Remove from oven and immediately press an unwrapped Hershey’s Kiss into the center of each cookie then let cool.
