White Chicken Chili
I love this recipe for when it is getting cold out and you want a warm but healthy comfort meal!
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Extra Virgin Olive Oil
- 1 cup1 cup1 cup Yellow Onion
- 2 whole2 whole2 whole Garlic, Cloves
- 2.5 cups2.5 cups2.5 cups Chicken Broth, Low Sodium
- 2 whole2 whole2 whole Green Chilies, 4 oz cans
- 1.5 tsp1.5 tsp1.5 tsp Cumin, Ground
- 0.25 tsp0.25 tsp0.25 tsp Cayenne Pepper
- .5 tsp.5 tsp.5 tsp Oregano, Dried
- 0.5 tsp0.5 tsp0.5 tsp Paprika
- .5 whole.5 whole.5 whole Lime Juice
- 2 whole2 whole2 whole Great Northern Beans, Canned, 15 oz
- 1 cup1 cup1 cup Plain Greek Yogurt
- 1 whole1 whole1 whole Canned Corn
- 2 cups2 cups2 cups Rotisserie Chicken

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Heat olive oil in a large pot over medium-high heat. Add onion and sauté until softened, 3-5 minutes. Add garlic and cook for 30 seconds
- 2. Add chicken broth, green chilies, all spices and lime juice.
- 3. Drain and rinse beans in a strainer.
- 4. Add whole beans and corn to the soup pot. Bring the mixture to a simmer and cook, uncovered, for 15 to 30 minutes.
- 5. Remove from heat and stir in sour cream and cooked chicken.
- 6. Serve garnished with cilantro, green onion, shredded cheese, avocado slices and tortilla chips if desired.
