protein “reese’s” cups
bite-sized treats + peanut butter + chocolate = PURE JOY! these mini-sized "reese's" are sure to be a hit. you could of course make them in a regular sized muffin tin, but i firmly believe the mini-size is part of the enjoyment (;

- 1 cup1 cup1 cup Sugar-Free Dark Chocolate Chips
- 0.5 cup0.5 cup0.5 cup Cottage Cheese
- 0.25 cup0.25 cup0.25 cup Peanut Butter
- 0.5 cup0.5 cup0.5 cup Peanut Butter Powder
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- Sea Salt

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a small sauce pan, melt dark chocolate chips.
- in a mini muffin tin, add muffin liners OR use a mini silicon mold.
- add a small scoop (~½ tsp) of melted chocolate to the bottom of each liner.
- to a food processor, mix remaining ingredients for pb filling.
- using a small cookie scoop (~1 t), add a scoop of pb filling to each divot.
- refrigerate for 10 minutes.
- add another layer of chocolate (~½ tsp) to the top of each cup.
- refrigerate until chocolate is hardened.
- store in the freezer.
