protein “reese’s” cups
bite-sized treats + peanut butter + chocolate = PURE JOY! these mini-sized "reese's" are sure to be a hit. you could of course make them in a regular sized muffin tin, but i firmly believe the mini-size is part of the enjoyment (;
Ingredients
- 1.5 cup1.5 cup1.5 cup Sugar-free Dark Chocolate Chips, or white chocolate chips
- 0.25 cup0.25 cup0.25 cup Peanut Butter, or nut butter of choice
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 0.5 tsp0.5 tsp0.5 tsp Vanilla Extract - Primal Palate
- 1 pinch1 pinch1 pinch Kosher Flake Salt - Primal Palate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a small sauce pan, melt dark chocolate chips.
- in a mini muffin tin, add muffin liners.
- add a small spoonful (~1 tsp) of melted chocolate to the bottom of each liner.
- combine nut butter, protein powder, monk fruit, & vanilla extract in a mixing bowl.
- add a small scoop (~¼ tsp) of nut butter to each cup.
- refrigerate for 10 minutes.
- add another layer of chocolate (~1 tsp) to the top of each cup.
- refrigerate until chocolate is hardened.
- store in the freezer.
