For the Loaf

- 200 grams200 grams200 grams Egg Whites
- 126 grams126 grams126 grams Buttermilk Power Cakes - Kodiak
- 126 grams126 grams126 grams Protein Oats - Kodiak
- 1 cup1 cup1 cup Fat-Free Ultra Filtered Milk - Fairlife
- .5 whole.5 whole.5 whole Core Power Protein Shake, Vanilla - Fairlife
- 0.25 cup0.25 cup0.25 cup Sugar-Free Maple Syrup - Cary's
- 2 tsp2 tsp2 tsp Cinnamon, Ground

- 4 tsp4 tsp4 tsp Pumpkin Pie Spice

Frosting
- 2 Tbsp2 Tbsp2 Tbsp Cream Cheese, Light
- 2 Tbsp2 Tbsp2 Tbsp Confectioners Sugar, Powdered - Swerve

- 30 grams30 grams30 grams Cottage Cheese, Low-Fat, blended

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix wet ingredients (except cream cheese, swerve, and 30 grams of cottage cheese)
- Mix dry ingredients
- Oil spray a loaf pan and pour ingredients into it
- Bake at 375 for 35-40 Minutes
- Use a toothpick or butter knife to test when you put into the loaf it should come out fairly clean
- While the loaf is baking, make your topping:
- Blend 30grams of cottage cheese
- Whisk in the cream cheese and swerve (An electric mixer is best)
- Once the loaf has cooled, spread with the cream cheese topping and add a little more pumpkin pie spice to it!
Notes
Have fun with the mix-ins. You can add mixed nuts like pecans or walnuts. Add chocolate chips. I like to keep the cottage cheese as is, it creates a more creamy texture. I added 2 scoops of Vanilla Protein Powder but you could add any flavor you enjoy. I hope you enjoy!
