Quick Pho (paleo)
True Pho takes many hours to get the deep rich broth flavors. But with this recipe you will enjoy a comforting bowl in less than 20 minutes. Plus it is super flexible and you can add other vegetables as you like.
Ingredients
- 1 lb1 lb1 lb Flank Steak, or skirt steak, sliced thinly
- 2 tsp2 tsp2 tsp Extra Virgin Olive Oil
- 4 cups4 cups4 cups Pho Broth, I like Oceans Halo brand
- 333 Baby Bok Choy, sliced thin
- 1 tsp1 tsp1 tsp Ginger Root, grated
- 8 oz8 oz8 oz Rice Noodles, I like the pho ones from Lotus Foods
- .33 cup.33 cup.33 cup Cilantro, remove leaves from stems
- 111 Lime, juiced

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium pot on medium high heat cook the steak about 2 minutes each side until golden brown. Depending on the size of the pot you may have to do this in batches to not over crowd the pan.
- Add the broth, bok choy, and ginger, cook for 5 minutes.
- Add noodles and cook for 2 minutes, stir periodically.
- Spoon into bowls and top with cilantro and a squeeze of lime.
Notes
Depending on the brand of noodles you use, it may take a bit longer to cook. You can top with sliced scallions if you want to add an onion flare.
