Reuben Dip
This hot Reuben Dip is one of the easiest, most flavor-packed appetizers you can throw together. It’s loaded with tender, salty corned beef, tangy, punchy sauerkraut, and plenty of melty Swiss cheese. It comes out of the oven bubbly, cheesy, and gloriously chunky.
Ingredients
- 1 Tbsp1 Tbsp1 Tbsp Butter, Salted

- 2 whole2 whole2 whole Green Onion (Scallion), chopped

- 4 oz4 oz4 oz Cream Cheese, Full Fat
- 2 Tbsp2 Tbsp2 Tbsp Ketchup
- 2 Tbsp2 Tbsp2 Tbsp Mayonnaise
- 2 Tbsp2 Tbsp2 Tbsp Dijon Mustard
- 1 cup1 cup1 cup Sauerkraut
- 1.5 cups1.5 cups1.5 cups Swiss Cheese, shredded, divided
- 0.5 lb0.5 lb0.5 lb Corned Beef, diced into cubes
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 1 Tbsp1 Tbsp1 Tbsp Chives, chopped (optional)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 375°F.
- Melt the butter in a small skillet over medium heat. Add the chopped scallions and sauté until softened and fragrant, about 2 minutes. Remove from heat and set aside.
- In a large bowl, whisk together the cream cheese, ketchup, Dijon mustard, and mayonnaise until smooth and creamy.
- Stir in the sautéed scallions, making sure to scrape in all the buttery goodness from the skillet.
- Fold in the drained sauerkraut, one cup of the grated Swiss cheese, chopped corned beef, and black pepper. Mix gently until everything is well combined.
- Spoon the mixture into a cast-iron skillet or small casserole dish and smooth the top. Sprinkle with the remaining shredded Swiss cheese.
- Bake uncovered for about 30 minutes, until the dip is hot and bubbling around the edges and the cheese on top has melted.
- Remove from the oven and sprinkle with chopped chives if using. Serve warm with toasted pumpernickel, rye bread, bagel chips, or sturdy crackers.
Notes
You can assemble the dip earlier in the day and refrigerate it until ready to bake. Chopped Corned Beef – ask for thick-cut slices right from the deli, then dice into small cubes. Or you can chop leftover cooked corned beef.
